I have been so excited to post this recipe, you have no idea. I love the Cafe Rio/Costa Vida chicken tortilla soup and have been wanting to duplicate it forever, I just haven?t gotten around do doing it.. until NOW. I am not going to lie.. this is my personal favorite tortilla soup recipe and it tastes just like Cafe Rio (if not BETTER). It is so fresh and delicious, you are going to love it!
Just a few side notes?? you can throw the chicken in the crock pot with the broth and it will probably still be amazing, but personally I LOVE the grilled chicken taste? grill it if you can! Also, you will notice I added pinto beans (not the Cafe Rio original way of doing things but it is totally worth doing). I liked it better actually and it makes the soup go further. If you want to keep it EXACTLY like Cafe Rio feel free to leave them out. And one more thing (because I am sure I will get e-mails about it).. instead of adding a scoop of guacamole (as I know Cafe Rio does), I just did diced avocado which just saves time having to make a separate little thing of guacamole (plus, I love having the chunks of cool avocado in there)!? *Serves 4-5

The jobs I?m talking about have nothing to do with wedding vows but are smaller jobs that keep our marriage together on a ?day to day? basis. There?s no discounting how important these smaller things are because when I?ve tried to ?handle? them?things have gone down hill quickly!
As you read these jobs some will laugh, while others will shake their head for me not being that ?independent? woman?that?s fine, I can admit that even women like myself can?t do it all.
1. Our household?s automobile repairs, needs and potential accidents. I am notorious for not taking care of my cars. I forget to get oil changes, I run into objects and I?ve even been known to even forget to put gas in my car. All of these situations have lead me into situations where someone?s mad and I?m an emotional wreck so when we got married, my husband agreed to take over ALL of our automobile needs. All I would have to do is fill my car up with gas and drive it.
Just last week a sensor went off in my car indicating that something was wrong with one of my tires. I reluctantly went and put more air in it but it still stayed on. By the time I got home I was highly irritated so I gave my husband the keys and asked him to handle it. There was no way I was going to go into a car repair shop and listen to some man explain some car ?mumbo jumbo? with me looking at him like he was speaking Spanish. Knowing I was frustrated he took my car and made the light go off. I did not ask him what he did I just knew that now I could drive my car without a sensor coming on. For years he?s tried to convince me to learn how to change a tire, change my oil but I refuse to listen. Isn?t that what?s he and AAA are for?
2. Fixing major repairs around our house. I?m not talking about minor repairs (clogged toilets, drains, etc) but major repairs that come ?out of nowhere?. There?s something about either a major appliance breaking or going out that can send me hovering in a corner. I start to calculate the cost and time and all reason goes out the window!
Last winter the heat went out in the downstairs of our house in the dead of winter. We had just came home from a weekend in Florida and when we walked in, I felt like I was still outside. I called the Home Warranty company and like always they began to use all kind of legal language to basically tell me that appliance wasn?t covered by our policy. I was cold, angry and about to start yelling so I did what I knew was best. I handed the phone to my husband and took the kids upstairs while he dealt with them. Less than 24 hours later we were sitting nice and toasty in some heat?courtesy of my husband?s negotiating skills.
There are other crisis around the house that come up and there is nothing more comforting when my husband says, ?Let me handle it.? I swear I feel like a thousand pounds are lifted off my shoulders and those words allow me relax instead of going into a panic. Knowing that at times he may be at work or not able to take care of it, I know how to handle most repairs but it just makes me relaxed knowing most of the time I do not have to.
3. If an unwanted animal is found on our property?I go into paranoid mode. I hate anything that crawls or scurries especially snakes, mice, squirrels. So imagine how hysterical I was when I found out a squirrel had gotten into our attic! Panicked by thoughts of waking up with a squirrel on my chest, I had to pack up the kids and leave our house while my husband found a way to get out of our house. Everyone thought I was being dramatic but I literally would think about it and go into a frenzy. My husband agreed to ?take care of it? and within 24 hours he called and told me he had trapped the squirrel and it was okay for us to come home!
There are other things my husband does that he doesn?t get enough credit for. If we hear a noise in the middle of the night, my husband goes downstairs to investigate the noise (usually called by some random object falling) and calm our fears. If something comes up at work that has me on the edge he calms me down before I go into a crisis mode. I can?t always be independent so I?m grateful to have a husband that is strong when I?m weak!
In the end, when my husband handles these ?crises? it allows me to relax and take care of all of the motherly/wifely duties that I have to do.

"I can't inherit any property. I can't divorce my husband and remarry even though he left me for another woman and beat me all the time."
Last month Prime Minister Sheikh Hasina approved a new law that will introduce official marriage registration for Hindus in Muslim-majority Bangladesh in a move designed to protect the rights of women like Rani.
The legislation, expected to be passed shortly in parliament, has been welcomed by civil rights activists and many Hindu women.
But critics say it is a token gesture that does not go far enough amid opposition from the religion's hardliners, who see it as unnecessary political interference in their cultural traditions.
Bangladesh has a secular legal system except in matters related to inheritance, marriage and divorce, when Muslims follow sharia law and Hindus follow laws based on ancient un-codified customs.
Under the new law, Hindus -- who make up 10 percent of the country's 152 million population -- will be able to register their marriages with local councils or courts for the first time.
"At the moment, when a Hindu man walks out on a marriage, the wife can't sue him for alimony or maintenance because lack of marriage papers make it almost impossible to prove that they were married at all," said lawyer Nina Goswami.
"Tens of thousands of Hindu men keep multiple wives, knowing that they can't be prosecuted," added Goswami, who is director of the respected rights group, Ain O Salish Kendra.
Goswami, herself a Hindu, has seen how lack of rights have driven many Hindu women to "unwanted jobs and extreme poverty" after they were dumped by their husbands.
However she believes that the government's new laws are only a token gesture to placate mainstream Hindu women without angering Hindu men, who generally vote for the Awami League, the current ruling party.
"Unfortunately, these women don't exist in the government's eyes and ears," she said. "To our politicians, the Hindu community is a big vote-bank, made up of only males."
The government rejects such criticism and says that it is hamstrung by hardline Hindu activists who oppose changes to the law.
Law Minister Shafique Ahmed told AFP the new legislation would cut down on polygamy, which is increasing among the Hindu males, and ensure maintenance rights for women whose partners have left them.
"We couldn't reform Hindu personal laws further because of opposition by Hindu groups including some of their most educated people. Hardliners did not even want registration of their marriages," Ahmed said.
Radical Hindu activists say they reject any reforms that go against their scriptures or traditions, saying divorce could threaten the basic foundation of the Hindu family.
"We don't mind optional registration because Hindu couples sometimes need the marriage certificate when they travel," said Hiren Biswas, the president of the Samaj Sangskar Parishad group.
"But we won't accept mandatory registration, or divorce and inheritance rights to women because our scriptures and customs don't allow them," he told AFP, alleging the new law was a conspiracy hatched by foreign-funded charities.
Muslim women in Bangladesh can divorce and seek damages for break-ups or sue their partners thanks to decades of legal activism by women and rights groups.
But Bangladeshi Hindus, who have suffered widespread persecution and religious discrimination since partition of the subcontinent in 1947, were bypassed by the new rights.
Despite the new laws, Hindu women face a long struggle as their community is split on whether women's issues are the best battlefield to fight for wider equality.
For leading reformers like Supreme Court lawyer Subrata Chowdhury, himself a Hindu, the battle must now move on.
"Persecution by Muslims, forcible conversion, eviction from land and stealing of our properties are more important now," he told AFP.

NICOSIA/MADRID (Reuters) - Cyprus said on Monday it would seek a European bailout to handle fallout from the Greek crisis, becoming the fifth euro zone country needing rescue funds hours after Spain formally requested help for its banks.
Despite the spreading crisis, German Chancellor Angela Merkel dashed any lingering hope in financial markets that Europe would issue common euro zone bonds to underpin its single currency.
Cyprus, the third smallest economy in the euro zone, announced it would apply for European Union funds as it needs to raise at least 1.8 billion euros - equivalent to about 10 percent of its domestic economic output - by the end of this week to recapitalize Cyprus Popular Bank.
"The purpose of the required assistance is to contain the risks to the Cypriot economy, notably those arising from the negative spill over effects through its financial sector, due to its large exposure in the Greek economy," a government announcement said.
Nicosia has to satisfy European regulators by June 30 about the health of Cyprus Popular Bank which has suffered heavy losses on Greek debt. It may seek more.
Greece's own crisis deepened on Monday when its new finance minister who was appointed only last week resigned because of ill health, throwing the government's drive to soften the terms of its EU/IMF bailout into confusion shortly before a European summit.
Tiny Cyprus, one of the euro zone's smallest economies, has a disproportionately large off shore financial sector heavily exposed to Greece. Greece, Ireland and Portugal have already taken EU rescues for their sovereign finances, and Spain is looking for an EU bailout for its banks.
SUMMIT SCEPTICISM
The euro and shares fell on Monday due to investors' skepticism that an EU summit this week would act decisively on the bloc's debt crisis.
At the two-day Brussels summit starting on Thursday leaders will discuss a cross-border banking union, closer fiscal integration and the possibility of a debt redemption fund.
But Merkel, who leads Europe's biggest economy and the main contributor to its rescue funds, said sharing debt liability within the 17-nation euro area would be "economically wrong and counterproductive".
France, Italy and Spain have pushed hard for steps towards mutualising debts and liabilities through a joint bank deposit guarantee, a common bank resolution fund and issuing common euro zone bonds. The conservative German leader adamantly rejects such ideas and is keen to squelch them before the meeting.
"When I think of the summit I feel concerned that yet again we will have too much focus on all kinds of ways of sharing debt," Merkel told a conference in Berlin.
Critics say that by refusing any such collective solutions, Berlin risks unleashing speculative attacks on Spanish and Italian bonds, hastening rescues which the euro zone's rescue funds are too small to manage.
Spanish and Italian bond yields rose on Monday as doubts spread that the EU summit would take any decisive action to stem the crisis, which began in late 2009. The euro fell against the dollar and investors sought shelter in U.S. government debt.
Spanish Economy Minister Luis de Guindos asked for up to 100 billion euros ($125 billion) in a letter to Eurogroup chairman Jean-Claude Juncker, saying the final amount of assistance would be set at a later stage. The letter formalizes Spain's request for the bailout, agreed on June 9.
He confirmed his intention to sign a Memorandum of Understanding for the package by July 9 and said the amount should be enough to cover all banks' needs, plus an additional security buffer.
The EU's top economic official, Olli Rehn, said a deal on terms for the loan from Europe's bailout funds could be concluded within weeks.
"The policy conditionality of the financial assistance, in the form of an EFSF/ESM loan, will be focused on specific reforms targeting the financial sector, including restructuring plans which must fully comply with EU state aid rules," he said.
The rescue is intended to help Spanish lenders recover from the effects of a burst real estate bubble and a recession, which have piled up bad loans and sinking property portfolios.
Prime Minister Mariano Rajoy told business leaders he would soon take new measures to revive economic growth and create jobs. He gave no details but said the government remained committed to cutting the public deficit.
Two independent audits last week put the Spanish banks' capital needs in a severe economic downturn at up to 62 billion euros, and a fuller audit will be delivered in September.
Some market economists believe the rescue is merely a prelude to a full bailout for the Spanish state, which saw its borrowing costs soar to euro era record levels above 7 percent early last week, although they have eased to below 6.50 percent.
A working document prepared by top EU officials calls for the gradual introduction of a banking union, starting with supervisory power for the European Central Bank and developing a deposit guarantee scheme based on pooling national systems, with a levy-funded bank resolution fund.
BERLIN REJECTION
Berlin has so far rejected any joint deposit guarantee or resolution fund, as well as proposals that euro zone governments should assume joint liability for each other's debts.
Finance Minister Wolfgang Schaeuble hammered home the message in weekend interviews, saying that throwing more money at the crisis would not solve the problems, and telling Greece it must try harder rather than seeking to soften bailout terms.
He cited Ireland and Portugal as countries that were succeeding in their EU/IMF adjustment programs and said Greece had not made a sufficient effort.
Merkel and French President Francois Hollande, whose relationship is testy, will have one more try at narrowing their differences before the summit on Thursday and Friday.
The German leader has shown no sign of relenting in her refusal to take on new liabilities for German taxpayers until other euro zone states agree to hand more sovereignty over national budgets and economic policies to EU institutions.
Hollande took the opposite position on Friday, saying there could be no more transfer of sovereignty until there was greater "solidarity" in the EU.
The two-day EU summit will be the 20th time leaders have met to try to resolve a crisis that has spread across the continent since it began in Greece in early 2010.
Greece's new prime minister, Antonis Samaras, who is recovering from eye surgery on Saturday, will miss the summit, and a visit by "troika" inspectors representing the country's international creditors due this week has been postponed.
The German spokesman said no decisions would be taken on Greece at the summit as the "troika" inspectors from the European Commission, ECB and the International Monetary Fund must first assess Greek compliance with its 130 billion euro bailout agreement before any renegotiation could be considered.
The Samaras government, which was sworn in last week, has called for the renegotiation of the terms of Greece's bailout, which is keeping the country from bankruptcy but at the cost of great economic suffering.
The euro zone has set up two rescue funds to try to contain the crisis, the temporary EFSF and the permanent ESM, due to come into force next month, but markets have so far judged that they contain too little money and their rules are too inflexible to be effective.

KANSAS CITY, Mo. (AP) ? Two little girls in a Kansas City apartment complex had perfectly braided hair, neighbors said Sunday, and were clean, happy and, if anything, "spoiled."
But the girls, ages 2 and 8, had a secret: a 10-year-old sister who weighed just 32 pounds when she was freed Friday from a locked closet that reeked of urine.
"We are all still shocked," neighbor Aishah Coppage, 28, said Sunday. "We never knew there was a third child."
Officers freed the girl, who will turn 11 later this summer, after responding Friday morning to a call from a child abuse hotline. The neighbors ? including one of Coppage's daughters and a niece ? watched as the girl was carried to an ambulance wearing a dingy white, toddler-sized shirt and no shoes.
"She was real skinny," said 14-year-old Kelisha Parrish, Coppage's niece.
The mother, who lives in public housing, faces charges of assault and child abuse and endangerment in Jackson County Circuit Court. The Associated Press is not naming the mother to protect the child's identity.
Mike Mansur, a spokesman for the Jackson County prosecutor's office, said he didn't know if the 29-year-old woman had an attorney. Janet Baker, the woman's attorney in a previous case, didn't immediately return a call Sunday seeking comment.
The woman's boyfriend has been questioned but is not charged. He is not the father of the 10-year-old, but is the father of the two younger children, who are in protective custody.
"You could never assume anything was going on from the way they looked," said Coppage, who has lived next door to the family for three years. "They seemed spoiled to me because I never saw them get disciplined. It seemed like they didn't want for nothing."
The closet where authorities believe the 10-year-old spent much of her time backed up to Coppage's stairwell. Coppage said she never heard any banging on the walls or cries for help, but added that music was always coming from the neighboring apartment.
"They had birthday parties for the other two girls," she said. "Everything that a normal person does, they did."
Coppage said the woman never mentioned the older girl, and that the woman never let her younger daughters outside unless she was supervising them.
Coppage said her own children sometimes played with the neighbor girls on the wooden deck, but never went inside their apartment. Coppage also said the only people she saw going inside her neighbor's apartment were the woman's siblings and boyfriend.
The woman made some money braiding hair, but always did it on the steps outside her apartment, Coppage said.
She said that when the woman's utilities periodically were shut off, the woman would take the two younger girls and stay with a downstairs neighbor or her sister.
"So the whole time, the baby had to be in here," she said.
According to the probable cause statement, the mother told police that she didn't let the oldest girl leave the house because she knew she is malnourished and would "get in trouble if someone saw her."
Mansur, the prosecutor's spokesman, said the mother hasn't said why she singled the girl out.
The girl, who was taken to Children's Mercy Hospital in Kansas City, told detectives she gets in trouble "because she keeps peeing on herself."
Authorities have not released the girl's name, and the hospital declined to provide an update on the girl's condition Sunday without her name.
Because of what has happened, Coppage is thinking about asking to be moved to a different unit, adding that her 12-year-old daughter is having a tough time.
"She don't even like to be here," Coppage said. "She is scared."

CROMWELL, Conn. (AP) ? River Highlands has been the sight of the first PGA Tour win for four of its last six tournament champions.
Roland Thatcher and Englishman Brian Davis would like to make it five of seven.
Davis shot a 6-under 64, and Thatcher had a 65 on Saturday to share the third-round lead in the Travelers Championship at 12 under.
Davis said he's not sure why this tournament, which comes a week after the U.S. Open, has been so good to relative unknowns.
"Obviously, some of the big players aren't here, but there is still a really good field here," Davis said. "It's just one of them things. I've had a couple of weeks off, maybe I'm not as tired as the other guys. But, I'll take my win anywhere. I don't care where it is."
Davis made an early move, shooting a 29 on the front nine with six birdies. Thatcher overtook him with three straight birdies on the back nine and had a one-stroke lead before missing a 7-foot par putt on the 17th hole.
"I executed just really well in that stretch," Thatcher said. "It's easy to say they're easy holes, and that's what you should do, but you still have to execute."
Seventeen other players were within five strokes of the lead entering the final round.
John Rollins, James Driscoll and Stuart Appleby were two strokes back. Defending champion Fredrik Jacobson, who led after two rounds, shot an even-par 70 to remain at 9 under.
Davis said his fast start was helped by the thunderstorms that pushed the finish of the second round to Saturday morning and softened up the greens.
"I didn't even realize I had shot 29," said Davis, who has been a runner-up on the PGA Tour five times. "I was just playing and everything was going right. Then obviously we hit the turn and we had the wind pick up for about three holes and it was playing tough all of the sudden."
The first-time winners at River Highlands include Jacobson last year, Bubba Watson (2010), Hunter Mahan (2007) and J.J. Henry (2006).
But Thatcher said he's not worried about that.
"I figure when I play well, I'll play well and hopefully it's going to be enough to keep the job every year," he said. "This week will go a long way towards that."
Appleby, by contrast, is looking for his 10th tour win after making just one bogey in his round. The 41-year-old Australian said he's happy to be considered the old veteran among the young guns vying for the championship.
"It would be good to get back in the winner's circle, he said. "The only cut I've made has been shaving for a long time. I played better golf when I was a rookie out here, and that's just not right."
Jacobson recovered from a bogey on 17 to birdie the final hole and stay within striking distance as he attempts to join Phil Mickelson, the 2001 and 2002 winner, as the only players to successfully defend a title at River Highlands.
"I'm really happy being three behind going into tomorrow rather than five or six," he said. "I'll take the positives."
Watson also is in the mix, one of four players at 8-under par. He had a 15-foot birdie putt to go 10-under at the 17th hole, but hit the ball five feet past the hole and then missed the return shot.
"It broke about 6 feet, maybe a gust of wind or something, and then when I putted it back up it either bounced or broke right and it shouldn't do that, obviously, because it went one way and then the other," Watson said.
Seventy-seven players spent Saturday morning finishing their second rounds after thunderstorms halted play early on Friday.
J.B. Holmes, who underwent brain surgery last September, finished the morning with 62, the second best round of his career. But he followed that a few hours later with a 75 and was nine strokes behind the leaders.
Camilo Villegas shot a second round 64 and shot 70 on Saturday afternoon. Villegas, who has three top-25 finishes this season, was four behind the leaders.
"It's nice to see my name up on the leader board," he said. "It's been a tough year and it's always good to play good."
Eighty-eight players made the cut at even par. But former UCLA star Patrick Cantlay wasn't among them. He shot a 67 on Saturday morning to finish 2 over in the first tournament of his professional career.
"I struggled on the first day and never really recovered," he said.
